Centers here have to have a commercial kitchen with regular health inspections (and we all have to have food handlers) so 3 step wash/sanitize and air dry for us.
I'm not sure what the rules are for home day cares, though.
Military licensed family child care providers are also trained food handlers, unannounced inspection every 4 months, same 3 steps.
