The 2003 Honda Odyssey should have 7 seating positions-- 2 in the front and 5 rear seating positions. What do you mean when you say your Odyssey "only holds 4 seats"? Do you mean that you can not fit three of the seats that you currently own across the third row?
You will likely have the same problem with any minivan. The backrows of most are narrow and it takes some help to figure out which seats will work in a three across. Even with the 8 passenger Chevy Venture, you will still have to find the right combination of car seats in order to fit three across both back rows.
If you tell me which carseats you have and if your children are rearfacing or forward facing, I can help you come up with a solution to fit five carseats in your Odyssey. I know a lot about choosing and installing carseats.
I had a chevy venture van, and I couldn't get six seats in it. It had one built in. (bless that thing) I could get two in the back, and one more in the middle row. So, four was all I could get in the van, including the built in.... maybe a small booster seat inbetween the carseats, but then there would only be a lap belt.
I totally understand how hard it is to get 3 carseats across the back seat of a vehicle. I have to do it all of the time in my Suburban. I found a Combi convertible carseat which I always put in the middle of the back seat. It works forward or rear facing. Rear facing fits the best. I do beat up my hand a little while buckling all of the seatbelts, but with 3 seats squeezed in, none of them are moving anywhere.
My Odyssey is an older model 7 passenger and it only fits 4 carseats. no matter what the combination is for the 3rd row I cannot get 3 across. - even with the sunshine radians, boosters, etc. It just wont happen.

Wow this makes me think!!! In August I will need to take my DCK's to take my oldest to pre-school. I have a 2006 Dodge Grand Caravan- my girls car seats are in the middle two seats, and I plan to put the DCK's all three in the back- anyone know the best way to do it?? I have a three year old and two one year olds. I plan to purchase the car seats myself, so can get the brands I choose but don't want to be TOO pricey if I can help it of course!!

I have an 02 Grand Caravan. It is a very tight squeeze to get three in the back, but it's possible. Last summer I had it figured out, but then didn't need to do it for a long time and forgot how and with which seats (and of course the kids have swithced sized seats now, too)! Currently I have 2 in boosters (no back) on the ends and a harnessed booster in the middle. Make sure to get a seat that doesn't have arm rests. Those things are such space hogs! Also, if your oldest is in a booster with a seat belt, I'd put that in the back seat. You'll have to do the buckle, but it probably will fit better space wise. Good luck!
