When my own kids were home I cooked dinner every night. I started dinner while the littles were still here.
Now it is dh and I. I made 34+ freezer meals about 3 weeks ago and we have been using those. Last night was chicken fajita salads, tonight italian pot pie. I have a lot of variety in there. Some are freezer crock pot meals- http://www.passionforsavings.com/con...an%2072815.pdf
I like all of those (just don't put the veg in the teriyaki until like the last hour)
I made fajita chicken (cut up chicken put in the marinade and froze) I pull out the bag and put it in the frig the night before. It takes maybe 15min to cook.
I have lasagna and spinach manicotti in there. Italian pot pie, meatloaf, enchiladas- all in little disposable pans. I put in frig night before and in my little counter top oven about an hour and a half before dinner- perfect!
    I made 3# of meatballs.
Most of those I just need to make rice, pasta, mashed potatoes, or a salad to go with them. Easy peasy.

I prep in the morning. Morning is a simple breakfast and free play so it allows me some time to get things done. Or get kids invovled depending on my patience level that morning . Like with meats, I'll season or bread, then put in a pan just to be put in the oven in the evening. I always include some form of potato so if it's mashed, I'll make those ahead of time (typically enough for 2 meals). For other potatoes, I'll make the seasoning ahead of time and just chop them up at the end of dinner. Veggies I typically do canned, or the steam in bag kinds so that's easy. Love the crock pot! A few favorites here are baked chicken breast (bone in with skin) that you just season and throw in he oven, mashed potatoes and canned corn. Jar of gravy and done. About 15-30 mins of prep. Then, you could do a meatloaf the next night, mix. all ingrediants in the meatloaf pan so it's ready to be put in the oven. Takes about 15 mins, use leftover mashed potatoes and another can of veggies. Or boil carrots if you have extra time. Just a few examples I couldn't pull off cooking at 5:00 and have a good attitude with my husband and kids . Believe me the few times I haven't prepped in he morning were enough to make me never want to put it off again

        Me too!!

The kids (10+) are supposed to plan and cook a meal each week but DH doesn't like to give up his kitchen so that's gone by the wayside.

During soccer season DH isn't home to cook so I end up making "Mom Food" - frozen pizza, spaghetti (jarred sauce), tacos, homemade mac and cheese, and for a while I had Wildtree meals in the freezer. The 21 yr old is more likely to cook during soccer season cuz she gets sick of Mom Food. LOL

or if DH asks me for input I always say "pizza" and he says "why do you always say pizza?"

Umm, the answer is always pizza! Duh!
