I think most of us use the term "circle time" to designate our formal learning times, not necessarily that kids are sitting in a circle. 
That said, my last few groups that I've had *needed* and *wanted* more structured, formal learning periods sprinkled throughout the day. It was a nice way to break up the day and frankly, when I tried to just "wing" it and be more casual, it never happens. When I ask my kiddos what they liked best about the day, it usually has something to do with an activity we did in circle.
One of our themes this month is numbers. Today in circle we did the calendar (my kids love to help) we read two books that had a numbers theme, and sang a song (this old man) that had numbers. During our sensory activity the kids found numbered sea shells "hidden" in the sand table. The kids had a blast.
On a selfish level, I find I feel more professional and accomplished when I have some plan for the day, and I feel like I'm actually using my brain to think, plan and carry out.
