This sounds like me! I even bought a waffle maker and told myself that I would make a huge batch of waffles on Sundays, but then my family doesn't want them so I just don't do it. It probably wouldn't take that long though, maybe we should try it sometime...::

I'm not ambitious at all. I put it all out 5 minutes before I open.

Oatmeal, grits, cold cereal, toast, and SOMETIMES pancakes/waffles.
      Fruit
      Milk

The eat cold cereal the best, for whatever reason. I'm on the food program so it's a grain + fruit + milk.

I make things like pancakes, waffles, french toast sticks, and muffins ahead of time in big batches and freeze them. Then I either put them in the toaster or in the microwave to warm them up. Some days we will do biscuits and I buy them frozen and just put them in the oven in the mornings.

We eat breakfast about 8:15. I serve lots of different things

          Cereal W/banana
          Peanut butter toast
          Baked oatmeal
          Smoothies
          Apple rings with nut butter
          Eggs-various ways
          French toast muffins
          Breakfast pizza
          Waffles/pancakes/fruit
          Cheese toast/fruit
          Orange slices/mini raisin bagel
          Homemade applesauce & toast
          Yogurt & toast
In the summer fresh fruit platter & yogurt
          Oven French toast
          Pumpkin bread
          Crockpot Blueberry French toast
          Egg bake
          Yogurt parfaitA
          Canteloupe & cinnamon toast
          Egg/English muffin/cheese

I tend to like to make the bigger production breakfast food at noon. I really don't like to make a big mess right away in the morning, so I freeze pancakes and waffles so they are ready to go.

I like the crock pot recipes and things like baked oatmeal, egg bake and French toast bake. Like i said, I don't like a big production in the morning. The rest of the day is a big enough production!

I buy huge quantities of shredded hashbrowns and make ahead hashbrown cupcakes and freeze them (they can be a side dish for breakfast or lunch). I use a regular size cupcake pan, and just stir a little olive oil, salt, and pepper in them, stuff them full (and push them down, because they shrink) and then bake til they are browned.

You can also make egg bakes ahead of time in cupcake tins, using liners, of course (and kids love that!).

French toast: I often make up the egg mixture ahead of the kids' arrival. French toast supposedly freezes well, but for some reason, it icks me out to think of that.

Pancake/waffle batter can be made up the night before and refrigerated.

Sausage biscuits and gravy: I hate making this, so I make it in huge quantities and freeze in smaller portions. I'll bake up homemade biscuits at the same time-they freeze very well.

You could even make mini-omelettes and freeze them ahead of time.

You could make up an "egg mcmuffin" type sandwich up and refrigerate or freeze (easy to do in quantity in advance-you could even just make the egg part, and make the muffins to order).

You could do breakfast pot-pies, or mini-quiche (tart pans or cupcake), or just make-ahead special toppings or stir-ins for oatmeal or even for plain toast.

Scrambled eggs freeze surprisingly well, you could fry up scrambled eggs inside egg rings and use them to build a ham and cheese wrap for breakfast.

There are so many easy things to do.
