As long as the parents pay for the formula, why should you care what she drinks?

If the parents expect you to pay for it, then I would tell them no.

I didn't even know there was such a thing as stage 3 formula. I thought it was just infant formula and toddler formula

She obviously has a reason or she wouldn't be doing it. I would ask again - let her know it would help you be more understanding of the whole situation if you knew WHY she wanted to continue formula.
I know it's recommended for many preemies to be on formula until 15-18 months, or even longer in some cases. Myabe there is a good reason and you just don't know what it is? The family might not be into giving the child dairy products and aren't satisfied with the alternatives (soy, nut milks, etc) but still want the nutrients offered by milk/formula? Who knows... I'd ask, and keep asking until I knew why!
