            It would depend on the age group but I would try to keep the skin on and just chop it smaller because it is the healthiest part (like the crust with bread). Plus I don't like to waste food, or any part of food, that is healthy because I have OCD and keep thinking about all the people who would love to eat this and need the nutrition and yet being able to have the luxury to waste it (thats why I will probably never do macaroni art in my program).
