I agree that a diabetic diet is a great healthy way of eating but I wouldn't want to consume alot of fat. I would be concerned about the heart issues and other things from the fat intake.
My DH eats VERY similar to what was posted above, only his diabetic counselor says he should eat 3 light meals and 3 snacks per day to help with maintaining sugar levels during the day and he has to have a prescribed cholesterol drug (Simvistat) to counteract the higher fat intake that usually goes along with a diabetic diet.
Unfortunately for him, net carbs is not something that works. The net carb thing might work for those trying to diet or counterbalance their other foods, but for insulin diabetics, net carbs are NOT true, he has to count ALL carbs without negating anything.
His counselor also told him the longer he stays in ketosis like you said above, the more fat your body burns but the fat your body burns first is the necesary and vital fat from around your organs and that can be dangerous. He is closely monitored with FULL blood work, liver and kidney tests as well as a myriad of other lab tests every 90 days so that loss of good fat and kidney/liver and heart functions are ok as well as making sure he has good cholesterol readings etc.
It is also important to remember that your body can't FULLY process all the proteins we eat without carbs so carbs (good ones) are definitely necessary.
