    Hot Breakfast?

    What do you serve for hot breakfast meals?

    Oatmeal
    Pancakes (cook extra on weekends, freeze, then heat in toaster)
    Waffles (same as pancakes)
    Scrambled eggs
    Baked oatmeal
    Toasted bagels and cream cheese
    Toast w/ PB and fruit smoothie (well the toast is hot... :P)
    Cream of rice (often with raisins or apricots cooked with it)

    On my list to try...
    French Toast Casserole
    Breakfast burritos
    Hee hee! Look, I have a signature!

          We like breakfast cups. Line 12 muffin tins with pizza dough half fill with toppings (bacon, ham, peppers, zucchini, scrambled egg, tomato, etc), sprinkle with a little cheese, pour over a little bit of pasta or pizza sauce and bake for 20 minutes. I make them 24 at a time and freeze them.

                My current group loves oatmeal.

                  Summer= cereal unless I get really ambitious and make waffles (w/ minin choc chips no syrup) or bagels some mornings, but they still want their cereal.
                  Winter we eat a lot of oatmeal (homemade, plain oats with some milk maybe a little honey for the older ones) and cream of wheat. Again, maybe waffles.
                  Breakfast needs to be simple. I have various drop off times and they want to eat when they get here. Grain + fruit + milk.

                    Breakfast is my favorite meal, so I try all sorts of things (although lately I've been a little more lazy). I try to have a carbohydrate, fruit or vegetable, and protein. I always serve milk with my meals. My only kryptonite is bacon. I usually don't feel like taking the time to make it or clean up the mess it makes, so I usually end up making turkey sausage. Here are my usual suspects:
                    1. Homemade belgium whole wheat waffles; served with turkey sausage and fresh fruit
                    2. Homemade whole wheat buttermilk pancakes (sometimes I add fresh blueberries to the batter); served with turkey sausage and fresh fruit
                    3. Fruit and yogurt parfait; made with Greek plain yogurt, granola with nuts and fresh berries
                    4. Smoothie; made with Greek plain yogurt, milk, ice, fresh strawberries and bananas and wheat germ
                    5. Homemade whole wheat french toast; served with turkey sausage and fresh fruit
                    6. Homemade pumpkin whole wheat pancakes; served with turkey sausage and fresh fruit
                    7. French toast casserole; made with whole wheat bread and fresh raspberries and served with turkey sausage
                    8. Hashbrown quiche casserole; made with pork sausage, an egg custard, hashbrown crust and served with fresh fruit
                    9. Scrambled eggs with cheese, buttered whole wheat toast and fresh fruit
                    10. Breakfast burrito; made with bacon, scrambled eggs, cheese, mild salsa and whole wheat tortilla; served with fresh fruit
                    11. Homemade crepes filled with strawberries and whipped cream; served with turkey sausage
                    12. Homemade muffins (usually blueberry, zucchini carrot, banana or apple cinnamon); served with turkey sausage and fresh fruit
                    13. Old fashioned oatmeal made with raisins
                    14. Cereal (I offer one choice: Multi-Grain Cheerios); served with fresh fruit

                      You should try baking the bacon in the oven on a broiler pan. I heard Rachael Ray say once that that's how restaurants make their bacon so all the pieces look the same. I tried it & I've never made it any other way since! The directions should be right on the back of the package. It's amazing. The bacon looks great, tastes great & it's super clean & easy! No greasy mess! Although on my food program I can't claim bacon as a protein...can you?

                        THIS!! Only not bagels with cream cheese, although I'd bet they'd like them!

                        Have tried fruit smoothies, but my kids don't care for them (go figure - they tasted nummy!) They also don't like breakfast burritos.

                        In addition I serve: baked eggs, eggs in a hole, peanut butter toast, baked french toast (I just break up bread, put in a casserole and pour the egg mixture over, sprinkle with cinnamon and bake. So easy and definitely a favorite around here!), homemade waffles. I don't make ahead too much, but do freeze ones not served for next time. I also make up a baking mix ahead of time (from Make a Mix Cookery) that is great for bicuits or pancakes or even a really good coffee cake! We get the coffee cake on special occasions.

                        I often make my syrup from fresh or frozen fruit instead of using store-bought syrup.

                          I make a smoothie with ~1 cup vanilla yogurt, ~1cup fruit juice or vanilla coconut milk and about 1-2 cups of frozen fruit. I also sprinkle in flax meal, sometimes use spinach (blend it up with just the milk first, then add the rest of the ingreds.). I call it a milkshake or ice cream for breakfast (will serve it in a bowl with a spoon if it's too thick) and they buy the story and gobble it up. Strawberry and pineapple is a favorite combination, or strawberry blueberry.
