Just to add another take - I'd still require a form signed by the parent with very specific instructions.
I think you asking for an alternative meal is adequate, as long as they have advanced notice. I also never serve just peanuts (or any nut, but esp. peanuts) to the kids, but I do serve peanut butter every once in a while.
Could you substitute almond butter just for this child? Would they be OK with that? I've also heard of people eating cream cheese instead, even with jelly on a sandwich. That might be a cheaper alternative (although it doesn't count for a protein on the meal plans) I don't know if you are on the meal plan, but if they bring their own lunch, you don't get paid for that child, so I'd rather offer a substitute, IMO.
