    Cooking and Freezing....

    pancakes and waffles and muffins

    What's the best way to accomplish the freezing? As in, packaging, etc. I want to make up an enormous batch of pancakes tomorrow to have in the freezer. I would also love to have waffles and muffins in the freezer.

    I use a gallon size Frezzer bag. If I know I will be frezzing the pan cakes and waffles I under cook them slightly. Then when ready to eat I put them in the toaster on the highest frozen setting. When freezing muffins I bake min ones. Because, they deforst faster. I pull them out at lunch time for afternoon snack, place them on a plate. I even refreeze when we do not use as much as I prodicted.

      I do the same. Make sure everything is completely cool before you bag and freeze it.

      I also have a really awesome bran muffin recipe that keeps for 2 months in the fridge so more often than not I'll just bake fresh muffins since it takes 2 minutes to get them from fridge to oven.

        Thanks for the tip! I made a 4x batch of pancakes this weekend and froze what we didn't eat--I let them cool completely and the put them in the Freezer bag and froze them. To use, I microwaved them for about a minute and a half and they were perfect!

          I just started doing this and it has been awesome! The muffins are the best--so far

          Still trying to figure out the freezing meals thing though

            I really need to start doing this. It would be such a time saver. Wish I could get the cook one day eat all week cooking down too. I'm not really good at that but hopefully will get there one day.
