    Pineapple Chicken-Huge Hit

    I made a new chicken recipe today for my DCK, they loved it!

    I marinated boneless skinless chicken tenders in
    1 cup pineapple juice
    1/3 cup brown sugar
    1/4 cup soy sauce

    for about an hour, then grilled (you could bake also).

    Served with rice, pineapple and green beans. The kids really loved it.

      My Dh just read this and said "Mmmm, write that one down!" He most fav things in the world are chicken, pineapple and soy sauce....we just never thought to put them together! LOL!!

        The original recipe had 1/2 cup brown sugar, but I put 1/3 just to cut down the sugar for the kids. If you like it sweet, add more.

          I make this using pineapple juice and teriyaki sauce. I also grill pineapple to go with it.

          Funny, we also have rice and green beans with this.

            We just tried this marinade at home and OMG!!!!! It is fabulous!!!! Thanks meganlavonnesmommy!!!! We have a food saver marinade thingy where you put the meat in and the marinade and then it ****s all the air out and marinades stuff really good and the above marinade rocks! We actually used chicken breast instead of smaller tenders and then grilled them with swiss cheese and a pineapple ring and had chicken sandwiches! YUM!!

              i'm probably wrong, but isn't teriyaki the same as the marinade suggested?

                  It sounds like it could be just as tasty with pork chops too. (I'm going to try it now!)

                  Sounds yummy!

                  I'm going to take the leftover marinade, boil it and add some corn starch for sauce. YUM!

                    Are you serving the rice as just plain white rice, or are you topping the rice with the chicken and sauce?
