    Eggpant Parm In The Crockpot

    Super easy, super yummy.

    You will need:
    2 eggplants
    1 20 oz jar of marinara
    1 12-16 oz bag of mozz cheese
    Bread crumbs
    A few eggs

    Whisk some eggs and have breadcrumbs ready. Cut eggplants into 1/4 to 1/2 inches thick. Salt. Dip into egg briefly. Toss breadcrumbs over it.

    Spray bottom of crockpot. Line as follows: layer of eggplant, marinara sauce, mozz cheese. Repeat until eggplant is all in crockpot.

    Cook on low for 4-5 hours. Don't overcook.
