Mini Banana Muffins

    Mini Banana Muffins

    2-3 very ripe bananas, peeled
    1/3 cup melted butter
    1/2 cup sugar
    1 egg, beaten
    1 teaspoon vanilla extract
    1 teaspoon baking soda
    Pinch of salt
    1 1/2 cups of all-purpose flour (I do half white and half whole wheat)

    Mix together, put in a mini muffin tin and bake at 350 degrees for about about 6 - 8 minutes. These cook very quickly though, so watch them. My littles LOVE these and they are so easy to make.

      If I fill the mini muffin tins all the way about one tray - if I follow directions and fill only 3/4 of the way about 1 and a half trays

        Ooh these were so good! Finally got around to making them for yesterday's snack. A whole tray of mini muffins and 3 regular ones. The little tots gobbled them right up and usually they're not crazy about muffins. But of course, true to form, my 3 yo picky dcg must've licked it and knew automatically she didn't like it.
        Thank you for sharing, it's now one of my regular snack recipes.

                I have not tried yet - but would like to! I follow a blog called "100 days of real food" she makes some wonderful muffin that freeze well. My favorite are the applesauce/carrot muffins.

                Yes! they do I usually whip them up super quick in the AM or during nap. The parents always comment how good it smells when they are baking.
