    Muffin Frittatas

    Spinach & Cheese Egg Muffins - A mini frittata made with bacon, onions, cheese and spinach. Always a breakfast fave!


    Mades these today and they were oh so good! I don't know if my dck's would eat them, but maybe yours would.

    I only used 6 eggs (mostly because I was in a hurry to get them in the oven before work and misread the directions ) I omitted onion because we don't like it. I added a cup of milk because that's how I make my regular frittata.Used frozen spinach because that's what I had (use that in my smoothies) I plan on freezing them and using them as a quick breakfast or lunch. lovethis

    They look yummy! I like spinach but in recipes don't like the stringy aspect of it and I think it turns the grandkids off to it too. Now I put a bunch of leaves on top of each other and chop them. Much better!

    P.S. Just realized you used frozen spinach. I'd buy the chopped kind.
