    No Bake Energy Bites (or balls)

    1 cup dry oatmeal (I used old fashioned oats)
    1/2 cup coconut flakes (original recipe calls for unsweetened)
    1/2 cup creamy peanut butter (or any nut butter of your choice, I've used sun butter and it was delicious)
    1/2 cup ground flax seed (I only use 1/4 cup cause too much makes it "grainy")
    1/2 cup mini chocolate chips
    1/3 cup honey
    1 tsp vanilla extract

    Mix all ingredients in a medium bowl.
    Chill for a 1/2 hour in the fridge.
    Roll into balls (about 1inch)
    Store in an airtight container for up to a week.

    Some variations:
    add 1 tsp of ground chia seeds to the mix
    Add sprinkles (or jimmies) to jazz them up
    Add chopped walnuts (1/4 cup) to the mix for a crunch (this is how I like them)

    I serve them with a glass of milk and apple slices.

    *edited to add, since these contain honey I don't give them to any kiddo under 1 year. You can use agave if you prefer.

        Do you think I could omit the coconut I have an allergy would it have any effect on end result?

            I made two versions of these yesterday - for DH who teaches in a peanut free class, I made them peanut free (sunbutter instead of peanut butter)

            And for me I made one with 1/4 cup peanut butter and 1/4 cup Nutella. So good!

              They sound good and easy, something the kids would love to help make. Thanks for sharing!!

              But don't you have a recipe called No Bake Sleepy Bites? Seems kids have way too much energy as it is.
