    Pumpkin Pie French Toast

    1 ice cube of pureed pumpkin (or sweet potato)
    1 egg
    1 slice of whole wheat bread
    Sprinkle of cinnamon or pumpkin pie spice


    (I always have some sort of pureed veggie in my ice cube trays. Most often it is either pumpkin or sweet potato.)

    I take one "ice cube" of pumpkin/sweet potato and let it melt a bit, mash it, mix it with an egg, sprinkle cinnamon or pumpkin pie spice, put a piece of bread in and cook like normal french toast.

      yeah yeah

      I do the SAME trick with butternut squash... the darker orange one. I use my seven grain bread and a farm fresh egg. I use "Penzey's" pumpkin spice or their apple pie spice.

      Kids dig it....

        My son and I both like it. Obviously I'm not doing care yet, but thought it was a good recipe to share as it is healthy and oh so yummy!

        And yes, Nannyde- I have used butternut squash too, but I like the taste of the other two better.
