    Muffins w/o Egg

    Does anyone have a muffin recipe without egg? Have you ever used egg substitute? (flax egg I believe)

    You can use applesauce or bananas in place of eggs. There is a mild change in texture, but not a ton. Use a bit more of the leavening (baking powder in most cases.)
    1/3 cup applesauce per egg or 1/2 banana
    Add 1/4 tsp more baking powder per egg

      I've also forgotten to put in the egg, and nothing terrible happened. They didn't hold together as well, but tasted fine.

        My dd has a severe egg allergy. I use egg replacer, it's a yellow box sold in most health food and some grocery stores. It's powder form and there isn't really a noticeable difference in taste.

          For muffins I tend to use banana. Can also use flax, tofu, yogurt or applesauce.
