So yeah, we're on a tight budget this week so doing lots of experimenting with bean recipes! I tried out this recipe for butter bean burgers, and YUM! All 4 of the kids have eaten their whole burger, including my SUPER PICKY 3.5 year old son! (And I even ate and liked it!!) All I did differently was omitted the peppers and onions. Oh and substituted bread crumbs for saltines.

I just might have to try that. I like unmeat protein options for the daycare (or fully cooked meat options), primarily due to not wanting to risk cross contamination with raw meats in my small cooking/prep area.
Don't forget about the lentil...it is my favorite of the dry beans & stuff.
Lentil Tacos, Lentils & rice, mmmmm....my kids all love these.
You can also make dirty rice with lentils instead of hamburger or sausage.- Flag
