Yes the EIN is used instead of your SS# to parents

Technically, a TIN is a Taxpayer Identification Number. An EIN is one example of a TIN. There are other examples of TINs that don't relate to family child care. Therefore, you received an EIN which you should use in place of your Social Security number with parents.
