Anyone here use it? I have a friend that just offered a bunch to me for the daycare. Never had it before. Is it something that kids would like? I don't want to take it and not use it.

My DH, on the other hand, is a whacko and eats it raw.

I have a delicious recipe for rhubarb cake if you would like it! It is not sour when it is cooked properly. Raw rhubarb is sour, but as kids we would just dip it in sugar. Probably not what you want to do with your daycare kids though.
LMK if you would like the recipe.- Flag

Mix one yellow cake mix according to directions.
In a separate bowl combine 4 cups sliced rhubarb and 2 cups sugar. Add to the prepared cake mix.
Pour into 9x13 pan and pour 1 pint of whipping cream over the top. Bake at 350 for 1 hour.
It is so easy and so good! It tastes great right out of the oven or cold. Store it in the fridge. If you get a chance to make it, I hope you like it!- Flag

Strawberry-rhubarb jam is YUMMY! And it's so easy! I use it on bread and it's also yummy on pancakes.
I also have a rhubarb bar recipe that's sort of like a cereal bar. We eat them for breakfast.::
Rhubarb is very good for you...lots of fiber! It does take a bit of sugar to make it taste edible though.Let me know if you'd like either of those recipes.
