I've had kids tell me the same thing, that they love what I serve. Really, because dinner shouldn't take more than an hour to make.
also, I come a european background so having large breaky isn't a big deal, but their theory is that they eat a big breakfast and a smaller lunch and dinner. along with all the stuff heidi posted they also served yogurt at breakfast.
the worst about the nurse mom I had was that she was overweight, not a bunch, but she would buy extra large drinks and take out food before she came and picked her kid up. But she then convinced her dr to have bypass surgury because she wanted to be thin. She didn't learn how to eat properly but it was a quick fix for her.- Flag

My nurse Mom's are the worst about nutrition as well. I have three of them now, have had many in the past, and not only are (were) every one of them overweight, as were their children, but they had the most awful feeding/eating habits. It is baffling!
That being said, I make very nutritious meals here and the kids ALL love the food I make. They frequently say "I wish my mom would make this" Then the parents say, "I wish she'd eat like that for me"....to which I'd like to reply "They would if you'd make it for them!". It should be acceptable to hand the mom a couple menu options and explain to her if she truly wants her child to finish a plate at dinner she could consider making what your suggesting... even if for no other reason than her kid really likes it.
