Ok so I am in the process of becoming group daycare. At interviews should I have my two subs plus my assistant here as well? Thank you so much.

No. It would be best for parents to see you as the head and the authority. All questions go thru you. It would be better for the subs and assistants to have minimal contact with the parents. You could always create a sheet that tells a little bit about each sub/assistant, their qualifications and such so the parents know you have experienced, capable people to help.
