I have a family leaving, and I wanted to do a special lunch for them. I ended up doing silver dollar pancakes with mix-ins, and it went well and still met CACFP guidelines.
I did wheat pancakes and for mix-ins, I used banana pieces, raisins, chopped ham, shredded cheese cooked on top, and just plain pancakes.
I didn't do syrup, I just had the kids hold them in their hands and eat them. It worked well, wasn't messy, and I let them eat as many as they wanted.
